- ½ cup vegetable oil
- ¾ cup sour cream
- ¾ cup heavy cream
- 4 eggs
- 1 box chocolate cake mix
- ¼ cup cocoa powder
- 1 tsp espresso powder (optional)
- 2 cups butter (cold and cut into chunks)
- 10 cups powdered sugar
- 2 tbs vanilla
- ½ cup plus 2 tbs heavy cream
- Pinch of salt
- Green Gel Food Coloring
- 1 M Piping Tip
- Piping Bags
- Golden Star Sprinkles
- Holiday Sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with decorative liners.
- In a large mixing bowl, blend together the chocolate cake mix, vegetable oil, sour cream, heavy cream, eggs, cocoa powder, and espresso powder until smooth.
- Fill each liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool completely.
- In another bowl, beat the cold butter until creamy, then gradually add powdered sugar and mix on low. Incorporate vanilla and a pinch of salt.
- Gradually mix in heavy cream until the frosting reaches a fluffy consistency. Add green gel food coloring to achieve the desired shade.
- Use the M piping tip fitted into a piping bag to swirl on the green frosting in a tree-like shape and top with golden star and holiday sprinkles.
Notes
For an extra moist cupcake, replace half of the eggs with applesauce. Add cinnamon for warmth, or mix chocolate and vanilla frosting for a fun look.
