- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Mixed berries (strawberries, blueberries, raspberries)
- Mint leaves for garnish
Instructions
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Beat the egg whites in a clean, dry bowl until soft peaks form. Gradually add the granulated sugar until glossy and stiff peaks form.
- Gently fold in the vinegar and cornstarch.
- Spoon the meringue onto the baking sheet into a large circle, about 8-10 inches wide.
- Bake for about 90 minutes, then turn off the oven and let it cool inside.
- While cooling, whip the heavy cream with the powdered sugar and vanilla until soft peaks form.
- Once cool, break the meringue into chunks and layer in a trifle dish with whipped cream and mixed berries.
- Repeat layers until all ingredients are used and garnish with mint leaves and additional berries.
Notes
Store leftovers covered loosely with plastic wrap for up to 48 hours. For freezing, keep meringue and cream separate.
