Ingredients

- 1 can chickpeas, drained and rinsed
- 2 medium beets, roasted and diced
- 1 cup feta cheese, crumbled

- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, roasted beets, feta cheese, and red onion.
- In a separate small bowl, whisk together the olive oil, lemon juice, fresh herbs, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine, trying not to break up the beets too much.
