Description

A vibrant salad bursting with color and flavor, featuring earthy beets, hearty chickpeas, and tangy feta.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 medium beets, roasted and diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 tablespoon fresh herbs (parsley, dill, or basil)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, roasted beets, feta cheese, and red onion.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, fresh herbs, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine, trying not to break up the beets too much.

Notes
