- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cooked brown rice
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, black beans, corn, brown rice, diced tomatoes, taco seasoning, salt, and pepper. Mix until well-coated.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Sprinkle shredded cheese on top.
- Bake in the oven for 25-30 minutes, or until heated through and the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
For extra crunch, add a layer of crushed tortilla chips on top before baking. To make it creamier, mix in sour cream or Greek yogurt.
