Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked brown rice
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, brown rice, diced tomatoes, taco seasoning, salt, and pepper. Mix until well-coated.
  3. Transfer the mixture to a greased baking dish, spreading it evenly.
  4. Sprinkle shredded cheese on top.
  5. Bake in the oven for 25-30 minutes, or until heated through and the cheese is bubbly and golden.
  6. Garnish with fresh cilantro before serving.

Notes
