- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 avocado, diced
- 1/4 cup cilantro, chopped

Instructions
- In a slow cooker, add the chicken breasts, black beans, corn, and salsa.
- Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
- Once done, shred the chicken using two forks and mix it back into the slow cooker.
- In a small bowl, whisk together chopped cilantro, lime juice, salt, and pepper.
- Serve the chicken mixture over rice or quinoa and top with diced avocado and cilantro lime dressing.
