Description

Enjoy these Ranch Oven Roasted Potatoes with crisp edges and gooey cheese – a reliable side dish that pairs well with hearty mains.

Ingredients

Scale
  • 2 pounds potatoes, diced
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the diced potatoes, olive oil, ranch seasoning, salt, and pepper.
  3. Toss until the potatoes are well coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, stirring halfway through.
  6. In the last 5 minutes of baking, sprinkle the shredded cheese over the potatoes and return to the oven until melted.
  7. Remove from the oven, garnish with chopped parsley if desired, and serve warm.

Notes

Store cooled leftovers in an airtight container for up to 3 to 4 days. For best texture, do not freeze after adding cheese.
