Ingredients

- 1 to 1.5 pounds ground beef
- Salt to taste
- 1/2 tsp black pepper or to taste
- 1/2 cup yellow onion, diced
- 2 cloves fresh garlic, minced or 1 tsp garlic powder
- 6 to 8 medium potatoes, thinly sliced
- 1 cup heavy cream or milk
- 2 cups shredded colby jack cheese
- Parsley or sliced green onion for garnish
Instructions
- In a large skillet with a lid, add ground beef and crumble with a spatula.
- Season with salt and pepper.
- Cook until browned, without draining the fat.
- Add diced onion and fresh garlic, stirring to combine.
- Add the thinly sliced potatoes.
- Pour in heavy cream or milk and stir.
- Cover and cook on medium-low heat for 15 minutes.
- Remove the lid and stir, then cover again and cook for another 20 minutes.
- Check the potatoes for tenderness; if not done, repeat another 10 minutes.
- Once the potatoes are fork-tender, sprinkle cheese on top.
- Cover and cook for 5 minutes or until the cheese melts.
- Garnish with parsley or sliced green onion before serving.
Notes
For added texture, try using a mix of white and sweet potatoes.
