Description

A one-pan comfort dish with crispy potatoes, savory beef, and a gooey cheese blanket, perfect for busy weeknights.


Ingredients

  • 1 to 1.5 pounds ground beef
  • Salt to taste
  • 1/2 tsp black pepper or to taste
  • 1/2 cup yellow onion, diced
  • 2 cloves fresh garlic, minced or 1 tsp garlic powder
  • 6 to 8 medium potatoes, thinly sliced
  • 1 cup heavy cream or milk
  • 2 cups shredded colby jack cheese
  • Parsley or sliced green onion for garnish

Instructions

  1. In a large skillet with a lid, add ground beef and crumble with a spatula.
  2. Season with salt and pepper.
  3. Cook until browned, without draining the fat.
  4. Add diced onion and fresh garlic, stirring to combine.
  5. Add the thinly sliced potatoes.
  6. Pour in heavy cream or milk and stir.
  7. Cover and cook on medium-low heat for 15 minutes.
  8. Remove the lid and stir, then cover again and cook for another 20 minutes.
  9. Check the potatoes for tenderness; if not done, repeat another 10 minutes.
  10. Once the potatoes are fork-tender, sprinkle cheese on top.
  11. Cover and cook for 5 minutes or until the cheese melts.
  12. Garnish with parsley or sliced green onion before serving.

Notes

For added texture, try using a mix of white and sweet potatoes.
