Delicious and versatile puff pastry bites filled with cheesy ground beef and caramelized onions, perfect for any gathering.

- 1 tablespoon olive oil
- 1 sweet onion, finely chopped
- 1 teaspoon brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 squeeze of fresh lemon
- 1/3 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1 1/2 tablespoons finely chopped dill pickle
- 1 1/2 tablespoons pickle brine or apple cider vinegar
- 1 pound lean ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 1/2 cups shredded cheddar cheese
- A pinch of all-purpose flour for dusting
- 2 puff pastry sheets
- 1 egg, beaten with a splash of water
Instructions
- Chop the sweet onion finely and heat oil in a skillet over high heat.
- Add onion, brown sugar, salt, pepper, and garlic powder; reduce heat and cook for about 20 minutes.
- Add water and lemon juice to deglaze the pan, cooking until the liquid is gone.
- Mix mayonnaise, ketchup, Dijon mustard, salt, garlic powder, onion powder, dill pickle, and pickle brine to make the special sauce; refrigerate.
- Preheat oven to 400°F (200°C).
- Add ground beef, salt, pepper, garlic powder, and onion powder to a skillet and cook until no longer pink, then add caramelized onions and 2/3 of the cheese.
- Roll puff pastry on a floured surface, cut into squares, fill with the beef mixture, and seal with the egg wash.
- Place on a baking sheet, brush with egg wash, and bake for 20-24 minutes until golden brown.
- Let bites rest briefly and serve with the special sauce.
Notes
Store in an airtight container in the fridge for up to 3 days. Can be frozen for up to a month.
