Description

Delicious and versatile puff pastry bites filled with cheesy ground beef and caramelized onions, perfect for any gathering.


Ingredients

  • 1 tablespoon olive oil
  • 1 sweet onion, finely chopped
  • 1 teaspoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 1 squeeze of fresh lemon
  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons finely chopped dill pickle
  • 1 1/2 tablespoons pickle brine or apple cider vinegar
  • 1 pound lean ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 1/2 cups shredded cheddar cheese
  • A pinch of all-purpose flour for dusting
  • 2 puff pastry sheets
  • 1 egg, beaten with a splash of water

Instructions

  1. Chop the sweet onion finely and heat oil in a skillet over high heat.
  2. Add onion, brown sugar, salt, pepper, and garlic powder; reduce heat and cook for about 20 minutes.
  3. Add water and lemon juice to deglaze the pan, cooking until the liquid is gone.
  4. Mix mayonnaise, ketchup, Dijon mustard, salt, garlic powder, onion powder, dill pickle, and pickle brine to make the special sauce; refrigerate.
  5. Preheat oven to 400°F (200°C).
  6. Add ground beef, salt, pepper, garlic powder, and onion powder to a skillet and cook until no longer pink, then add caramelized onions and 2/3 of the cheese.
  7. Roll puff pastry on a floured surface, cut into squares, fill with the beef mixture, and seal with the egg wash.
  8. Place on a baking sheet, brush with egg wash, and bake for 20-24 minutes until golden brown.
  9. Let bites rest briefly and serve with the special sauce.

Notes

Store in an airtight container in the fridge for up to 3 days. Can be frozen for up to a month.
