Description

These Carrot Cake Energy Balls are a delightful and nutritious treat, bursting with the warm flavors of your favorite carrot cake, and super easy to make with no baking required.


Ingredients

Scale
  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut (for rolling)

Instructions

  1. Combine Ingredients: Add all the ingredients into a food processor and pulse until thoroughly blended to a slightly sticky texture.
  2. Shape the Balls: Scoop out portions of the dough and roll them into bite-sized balls.
  3. Coat in Coconut: Roll each ball in the extra shredded coconut until fully coated.
  4. Chill Them Out: Place the rolled energy balls in the fridge for at least one hour to firm up before enjoying.
