- 1/3 cup shredded carrots
- 1 cup walnuts
- 1 tbsp chia seeds
- 1/3 cup shredded unsweetened coconut
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1 tsp vanilla extract
- 1/2 cup shredded coconut (for rolling)
Instructions
- Combine Ingredients: Add all the ingredients into a food processor and pulse until thoroughly blended to a slightly sticky texture.
- Shape the Balls: Scoop out portions of the dough and roll them into bite-sized balls.
- Coat in Coconut: Roll each ball in the extra shredded coconut until fully coated.
- Chill Them Out: Place the rolled energy balls in the fridge for at least one hour to firm up before enjoying.
