- 2 chicken breasts, skinless and boneless
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the chicken breasts evenly with Cajun seasoning.
- In a large skillet, heat olive oil over medium heat and cook the chicken for about 7-8 minutes per side until done. Let it rest before slicing.
- In the same skillet, add rice and chicken broth, bring to a boil, reduce heat to low, cover, and cook until rice is tender (15-20 minutes), stirring occasionally.
- While the rice cooks, heat heavy cream in another pot and stir in Parmesan cheese over low heat until melted.
- Serve the rice topped with sliced Cajun chicken and creamy Parmesan sauce, garnished with chopped parsley.
Notes
Add a squeeze of lemon juice before serving for extra brightness.
