Description

A flavorful and creamy Cajun chicken and rice bowl that brings the taste of New Orleans to your dinner table in under 30 minutes.


Ingredients

  • 2 chicken breasts, skinless and boneless
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts evenly with Cajun seasoning.
  2. In a large skillet, heat olive oil over medium heat and cook the chicken for about 7-8 minutes per side until done. Let it rest before slicing.
  3. In the same skillet, add rice and chicken broth, bring to a boil, reduce heat to low, cover, and cook until rice is tender (15-20 minutes), stirring occasionally.
  4. While the rice cooks, heat heavy cream in another pot and stir in Parmesan cheese over low heat until melted.
  5. Serve the rice topped with sliced Cajun chicken and creamy Parmesan sauce, garnished with chopped parsley.

Notes

Add a squeeze of lemon juice before serving for extra brightness.
