- 2 cups of broccoli florets
- 1 cup of shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable or chicken broth
- 1 cup of milk or cream
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Optional: cooked chicken for additional protein
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent, about 5 minutes.
- Toss in the broccoli florets and sauté for another 2-3 minutes.
- Pour in the broth and bring to a boil. Once boiling, reduce heat and let it simmer for 10-15 minutes until the broccoli is tender.
- Blend the soup until smooth or keep some broccoli florets intact for a chunkier version.
- Stir in the milk or cream, followed by the shredded cheddar cheese until well combined. Season with salt and pepper to taste. Serve hot.
Notes
For a bolder flavor, mix in a combination of cheeses like Gruyère or Pepper Jack. You can add butternut squash for sweetness or fresh herbs for a burst of flavor. This soup is naturally gluten-free as long as you use gluten-free broth and cheese.
