Description

A comforting and cheesy broccoli cheddar soup that is easy to prepare and perfect for any weekday dinner.


Ingredients

  • 2 cups of broccoli florets
  • 1 cup of shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable or chicken broth
  • 1 cup of milk or cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Optional: cooked chicken for additional protein

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent, about 5 minutes.
  2. Toss in the broccoli florets and sauté for another 2-3 minutes.
  3. Pour in the broth and bring to a boil. Once boiling, reduce heat and let it simmer for 10-15 minutes until the broccoli is tender.
  4. Blend the soup until smooth or keep some broccoli florets intact for a chunkier version.
  5. Stir in the milk or cream, followed by the shredded cheddar cheese until well combined. Season with salt and pepper to taste. Serve hot.

Notes

For a bolder flavor, mix in a combination of cheeses like Gruyère or Pepper Jack. You can add butternut squash for sweetness or fresh herbs for a burst of flavor. This soup is naturally gluten-free as long as you use gluten-free broth and cheese.
