These Breakfast Protein Biscuits pack a delightful punch with 12 grams of protein in each biscuit, making your mornings nutritious and satisfying.


Ingredients

  • 2 cups Whole Wheat Flour
  • 1 cup Protein Powder (vanilla flavor recommended)
  • 1 tbsp Baking Powder
  • ½ tsp Salt
  • ¼ cup Coconut Oil, melted
  • 1 cup Greek Yogurt (plain)
  • 2 Large Eggs
  • 1/3 cup Honey or Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 cup Mixed Berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, and salt until well combined.
  3. In a separate bowl, mix the melted coconut oil, Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth and creamy.
  4. Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the mixed berries.
  5. Using a ¼ cup measure, scoop and drop the batter onto the baking sheet. Shape them into a nice biscuit round if you’d like.
  6. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  7. Allow cooling for a few minutes before enjoying or storing them.

Notes
