A delicious roasted salmon dish with a sweet and smoky bourbon peach marinade, perfect for summer evenings.

- 6–8 ounces salmon filets, skin-on
- 1/2 cup bourbon
- 1 cup fresh peaches, sliced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a bowl, mix bourbon, soy sauce, brown sugar, minced garlic, salt, and pepper to create the marinade. Let it sit for a few minutes.
- Place the salmon filets in the marinade for at least 30 minutes, preferably up to 2 hours.
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium-high heat. Sear the salmon for 2-3 minutes on each side.
- Transfer salmon to a baking dish, add sliced peaches, and pour the marinade over the top.
- Bake for 15-20 minutes or until the salmon is cooked through (145°F or 63°C).
- Serve warm, drizzled with the glaze.
Notes
For deeper flavor, marinate overnight but be cautious of saltiness. Searing in a cast iron skillet gives the best results.
