Description

A delicious roasted salmon dish with a sweet and smoky bourbon peach marinade, perfect for summer evenings.


Ingredients

  • 68 ounces salmon filets, skin-on
  • 1/2 cup bourbon
  • 1 cup fresh peaches, sliced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, mix bourbon, soy sauce, brown sugar, minced garlic, salt, and pepper to create the marinade. Let it sit for a few minutes.
  2. Place the salmon filets in the marinade for at least 30 minutes, preferably up to 2 hours.
  3. Preheat oven to 400°F (200°C).
  4. Heat olive oil in a skillet over medium-high heat. Sear the salmon for 2-3 minutes on each side.
  5. Transfer salmon to a baking dish, add sliced peaches, and pour the marinade over the top.
  6. Bake for 15-20 minutes or until the salmon is cooked through (145°F or 63°C).
  7. Serve warm, drizzled with the glaze.

Notes

For deeper flavor, marinate overnight but be cautious of saltiness. Searing in a cast iron skillet gives the best results.
