Tender, flaky cod baked with butter, herbs, and lemon for a healthy and delicious New England-inspired dinner
Ingredients

- 2 pounds fresh cod fillets, skin removed, cut into 6 portions
- 4 tablespoons unsalted butter, melted
- 1 large lemon, juiced (about 3 tablespoons)
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon sweet paprika
- ¼ cup dry white wine or chicken broth
- 2 tablespoons fresh breadcrumbs (optional)
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
Instructions
- 1. Preheat oven to 400°F. Pat cod fillets dry and let come to room temperature for 15 minutes.
- 2. Combine melted butter, lemon juice, garlic, parsley, thyme, salt, pepper, and paprika in a small bowl.
- 3. Heat olive oil in oven-safe skillet over medium heat. Cook onions for 5-7 minutes until translucent.
- 4. Arrange cod fillets over onions and pour butter mixture evenly over fish.
- 5. Add wine or broth to bottom of pan, not directly over fish.
- 6. Sprinkle breadcrumbs over fillets if using.
- 7. Bake for 12-15 minutes until fish flakes easily and reaches 145°F internal temperature.
- 8. Let rest 2-3 minutes before serving with pan juices.
Notes
Store leftovers in refrigerator for up to 2 days. Reheat gently in 300°F oven. Fish is done when it flakes easily and reaches 145°F internal temperature.
