Description
A comforting one-pot meal featuring smoky sausage, black beans, and vibrant bell peppers, perfect for family dinners.
Ingredients
Scale
- 1 cup black beans (canned or cooked)
- 1 cup rice (white or brown)
- 1 pound sausage (smoked or andouille)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (chopped)
- 2 cups chicken or vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro (for garnish)
Instructions
- Heat a large pot over medium heat. Sauté the chopped onion, bell pepper, and minced garlic until softened and fragrant.
- Slice the sausage and add it to the pot, cooking until browned and crispy.
- Stir in the black beans and rice, along with cumin and paprika.
- Pour in the broth and bring to a gentle boil.
- Reduce the heat, cover, and let it simmer for about 20 minutes until the rice is tender and fluffy. Stir occasionally to prevent sticking.
- Season with salt and pepper, serve hot, and garnish with fresh cilantro.
Notes
For deeper flavor, brown the sausage longer for crispy bits. A splash of lime juice before serving brightens the dish. Add jalapeños for a kick if desired.
