Description

A comforting one-pot meal featuring smoky sausage, black beans, and vibrant bell peppers, perfect for family dinners.

Ingredients

Scale
  • 1 cup black beans (canned or cooked)
  • 1 cup rice (white or brown)
  • 1 pound sausage (smoked or andouille)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 2 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Heat a large pot over medium heat. Sauté the chopped onion, bell pepper, and minced garlic until softened and fragrant.
  2. Slice the sausage and add it to the pot, cooking until browned and crispy.
  3. Stir in the black beans and rice, along with cumin and paprika.
  4. Pour in the broth and bring to a gentle boil.
  5. Reduce the heat, cover, and let it simmer for about 20 minutes until the rice is tender and fluffy. Stir occasionally to prevent sticking.
  6. Season with salt and pepper, serve hot, and garnish with fresh cilantro.

Notes

For deeper flavor, brown the sausage longer for crispy bits. A splash of lime juice before serving brightens the dish. Add jalapeños for a kick if desired.
