A quick and comforting one-pot meal featuring beef and creamy tomato sauce that can be prepared in just 30 minutes.

- 1 1/2 tbsp olive oil
- 2 garlic cloves, finely minced
- 1 onion, finely chopped
- 500g/1 lb beef mince (ground beef)
- 2 tsp Italian herbs
- 2 tbsp tomato paste
- 400g/14 oz can crushed tomatoes (or tomato passata)
- 1/2 tsp red pepper flakes (optional)
- 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 4 cups (1 L) chicken stock/broth (low sodium)
- 350g/12 oz short pasta (fusilli, penne, elbow macaroni)
- 3/4 cups thickened/heavy cream
- Parmesan cheese, finely grated (for serving)
- Parsley, finely chopped (optional for serving)
Instructions
- Heat the olive oil in a large heavy-based pot over high heat.
- Add garlic and onion, cooking for 1 1/2 minutes until fragrant and soft.
- Add the beef mince and cook until browned with no red meat visible.
- Stir in the Italian herbs and cook for 30 seconds.
- Add the tomato paste, cooking for 1 minute.
- Stir in the crushed tomatoes, chicken stock, salt, pepper, and red pepper flakes (if using).
- Add the pasta and bring to a simmer, cooking for 15 minutes while stirring occasionally.
- Finally, stir in the cream and simmer for an additional 1 to 2 minutes.
- Serve in bowls and garnish with Parmesan and parsley.
Notes
For added richness, consider mixing beef with pork mince or adding some spicy elements like hot sauce.
