Description

A quick and comforting one-pot meal featuring beef and creamy tomato sauce that can be prepared in just 30 minutes.


Ingredients

  • 1 1/2 tbsp olive oil
  • 2 garlic cloves, finely minced
  • 1 onion, finely chopped
  • 500g/1 lb beef mince (ground beef)
  • 2 tsp Italian herbs
  • 2 tbsp tomato paste
  • 400g/14 oz can crushed tomatoes (or tomato passata)
  • 1/2 tsp red pepper flakes (optional)
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 cups (1 L) chicken stock/broth (low sodium)
  • 350g/12 oz short pasta (fusilli, penne, elbow macaroni)
  • 3/4 cups thickened/heavy cream
  • Parmesan cheese, finely grated (for serving)
  • Parsley, finely chopped (optional for serving)

Instructions

  1. Heat the olive oil in a large heavy-based pot over high heat.
  2. Add garlic and onion, cooking for 1 1/2 minutes until fragrant and soft.
  3. Add the beef mince and cook until browned with no red meat visible.
  4. Stir in the Italian herbs and cook for 30 seconds.
  5. Add the tomato paste, cooking for 1 minute.
  6. Stir in the crushed tomatoes, chicken stock, salt, pepper, and red pepper flakes (if using).
  7. Add the pasta and bring to a simmer, cooking for 15 minutes while stirring occasionally.
  8. Finally, stir in the cream and simmer for an additional 1 to 2 minutes.
  9. Serve in bowls and garnish with Parmesan and parsley.

Notes

For added richness, consider mixing beef with pork mince or adding some spicy elements like hot sauce.
