Description

A creamy, dreamy pasta dish perfect for date nights or any occasion to impress.


Ingredients

Scale
  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • 8 oz pasta (penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Sear in the skillet for 3-4 minutes on each side until golden and cooked through.
  3. Remove chicken from the skillet and set aside.
  4. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Stir in the sun-dried tomatoes and cook for another minute.
  6. Pour in the chicken broth and simmer for 3-4 minutes to reduce slightly.
  7. Lower the heat and stir in heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes.
  8. While the sauce is thickening, cook the pasta according to package instructions in salted water until al dente.
  9. Drain the pasta and toss it with the sauce in the skillet.
  10. Slice the reserved cooked chicken and place it on top of the pasta. Garnish with fresh basil.

Notes

For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative. Consider adding vegetables like spinach or cherry tomatoes.
