- 2 large boneless, skinless chicken breasts, sliced thinly
- Salt and pepper, to taste
- 2 tbsp olive oil, for searing
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional for spice)
- 8 oz pasta (penne, rigatoni, or fettuccine)
- Fresh basil, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper. Sear in the skillet for 3-4 minutes on each side until golden and cooked through.
- Remove chicken from the skillet and set aside.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Stir in the sun-dried tomatoes and cook for another minute.
- Pour in the chicken broth and simmer for 3-4 minutes to reduce slightly.
- Lower the heat and stir in heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes.
- While the sauce is thickening, cook the pasta according to package instructions in salted water until al dente.
- Drain the pasta and toss it with the sauce in the skillet.
- Slice the reserved cooked chicken and place it on top of the pasta. Garnish with fresh basil.
Notes
For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative. Consider adding vegetables like spinach or cherry tomatoes.
