- 1 pound lean ground beef
- 1 medium onion, finely diced
- 1/4 cup butter
- 2 medium cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1/2 cup chicken broth
- 1 teaspoon dried thyme leaves
- 1 teaspoon fine sea salt
- 1/2 teaspoon dried parsley
- 1/2 teaspoon ground black pepper
- 3 pounds russet potatoes, sliced into rounds about 1/4” thick
- 1 1/2 cups freshly shredded sharp cheddar cheese, divided
Instructions
- Preheat the oven to 350°F (176°C).
- In a large nonstick skillet over medium heat, cook the ground beef and onion until the beef is no longer pink, about 10 minutes. Break up the beef while cooking.
- Remove beef, discard grease, and wipe out the skillet. Return skillet to medium heat and melt the butter.
- Add garlic and sauté for about 2 minutes.
- Whisk in the flour until combined into an even texture.
- Mix the milk and chicken broth in a bowl, then gradually whisk into the roux until smooth.
- Add parsley, thyme, salt, and pepper. Bring the sauce to a light boil and simmer for 1 minute, then stir in 1 cup of shredded cheese.
- Grease a 13×9 casserole dish and layer 1/3 of the potatoes, seasoning with salt and pepper, then 1/3 of the sauce and beef.
- Repeat to create three layers, ending with cheese on top.
- Cover with foil and bake for 1 hour. Remove foil and bake for another 15 minutes, then broil for 3-4 minutes until cheese is golden.
- Let it rest for 15 minutes before serving.
Notes
For added flavor, consider mixing sharp cheddar with mozzarella or adding vegetables like peas.
