Description

A delicious and filling crockpot meal combining garlic, Parmesan, and tender chicken with pasta.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 package (8 oz) cream cheese, cubed and softened
  • 1 tbsp minced garlic
  • 12 oz pasta (penne, rotini, or your favorite)
  • ½ cup heavy cream or half-and-half
  • Optional: chopped parsley or extra Parmesan for garnish

Instructions

  1. Place the chicken breasts in the crockpot, then sprinkle with garlic powder, onion powder, salt, and black pepper.
  2. Pour in the chicken broth, toss in the Parmesan cheese, cream cheese, and minced garlic.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours until the chicken is cooked through and tender.
  4. Once done, shred the chicken directly in the crockpot using two forks.
  5. Cook the pasta according to package directions, drain it, and add it to the crockpot.
  6. Pour in the heavy cream or half-and-half, stirring until the pasta is coated with the creamy sauce.
  7. Dish it up while it’s warm, garnished with extra Parmesan or a sprinkle of parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage. For added flavor, consider searing chicken before cooking.
