Description

A hearty and comforting beef and rice casserole that’s easy to prepare, making it perfect for busy weeknights.


Ingredients

  • 1 pound ground beef (regular 80/20)
  • 2 cups long-grain white rice, uncooked
  • 2 cans French onion soup (10.5 ounces each)
  • 2 cans beef consomme (10.5 ounces each)
  • 1/2 cup unsalted butter, sliced into pats
  • Chopped chives, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F and spray a 9×13 inch baking dish with nonstick spray.
  2. In a medium skillet over medium heat, cook the ground beef until browned and no longer pink, about 8 to 10 minutes.
  3. Drain the excess grease from the cooked beef.
  4. Add the drained beef to the prepared baking dish and spread it evenly across the bottom.
  5. Top the beef with the uncooked rice, spreading it evenly.
  6. Pour both cans of French onion soup and both cans of beef consomme over the rice and beef, stirring gently to combine.
  7. Dot the surface with sliced pats of unsalted butter.
  8. Cover the dish tightly with aluminum foil and bake for 30 minutes.
  9. After 30 minutes, remove the foil and bake for an additional 30 minutes until the rice is cooked through and slightly browned.
  10. Let the casserole rest for 5 to 10 minutes, then fluff the rice gently with a fork and serve garnished with chopped chives if desired.

Notes

Experiment with low-sodium soups for a healthier option. Allow the casserole to rest before serving to maintain texture.
