- 1 pound ground beef
- 1 9-ounce package raw coleslaw
- 2 scallions, thinly sliced
- 1 tablespoon peeled freshly grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (optional)
- Optional black sesame seeds for garnish
Instructions
- In a small mixing bowl, stir the soy sauce and sriracha together until smooth. Set aside.
- In a large pan over medium-high heat, cook the ground beef until browned and crumbled, about 5 minutes. Leave the beef and fat in the pan.
- Stir in the coleslaw mix and cook until the cabbage wilts and becomes tender, about 5 minutes.
- Reduce heat to medium-low. Stir in the prepared sauce and grated ginger until well-mixed, about 1 minute.
- Turn off the heat and stir in the sliced scallions. Garnish with sesame seeds if desired.
- Serve promptly while hot.

For the best texture, serve the stir fry immediately. You can store leftovers in an airtight container for up to 3 days in the fridge or freeze for 2-3 months.
