Description

A quick and nourishing stir fry packed with protein from ground beef and fiber from cabbage, making it a satisfying and versatile meal for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 9-ounce package raw coleslaw
  • 2 scallions, thinly sliced
  • 1 tablespoon peeled freshly grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (optional)
  • Optional black sesame seeds for garnish

Instructions

  1. In a small mixing bowl, stir the soy sauce and sriracha together until smooth. Set aside.
  2. In a large pan over medium-high heat, cook the ground beef until browned and crumbled, about 5 minutes. Leave the beef and fat in the pan.
  3. Stir in the coleslaw mix and cook until the cabbage wilts and becomes tender, about 5 minutes.
  4. Reduce heat to medium-low. Stir in the prepared sauce and grated ginger until well-mixed, about 1 minute.
  5. Turn off the heat and stir in the sliced scallions. Garnish with sesame seeds if desired.
  6. Serve promptly while hot.

For the best texture, serve the stir fry immediately. You can store leftovers in an airtight container for up to 3 days in the fridge or freeze for 2-3 months.
