- 1 cup chopped carrots
- 1 cup chopped onions
- 1 cup chopped celery
- 1 pound ground beef (85/15 or 90/10)
- 4 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1.5 teaspoons garlic salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 0.25 teaspoon ground black pepper
- 3 cups baking mix (like Bisquick)
- 1 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C) and lightly coat a 9×13-inch baking dish with cooking spray.
- Heat canola oil in a sauté pan over medium-high heat and add chopped carrots, onions, and celery; sauté until onions are translucent, about 5 to 7 minutes.
- Heat a large skillet over medium-high heat and add ground beef; cook until browned and crumbly, about 5 to 7 minutes, then drain excess grease.
- Return beef to skillet, add butter and melt; whisk in flour until combined and bubbly, about 1 to 2 minutes.
- Whisk in beef broth gradually, scraping the pan to loosen browned bits; stir in sautéed vegetables, garlic salt, onion powder, garlic powder, and black pepper; bring to a gentle boil.
- In a medium bowl, mix baking mix and buttermilk until a soft dough forms; roll out to 1/2-inch thickness and cut out biscuits.
- Pour beef mixture into the baking dish and arrange biscuits on top so they touch but do not overlap.
- Bake for 24 to 25 minutes until biscuits are golden brown and filling is bubbling; let rest for 5 minutes before serving.
Notes
For a lighter topping, brush baked biscuits with melted butter for a glossy finish. Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
