Description

A comforting, protein-forward dinner that combines ground beef, rice, and cheese for a satisfying meal.


Ingredients

  • 1 lb. ground beef (85% lean)
  • 1.5 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 3 tablespoons butter (divided)
  • ¾ cup onions (diced)
  • 1 tablespoon garlic (minced)
  • 2 ½ cups beef broth
  • 1 ¼ cups uncooked white long grain rice
  • 8 oz. sliced button mushrooms
  • 10.5 oz. cream of mushroom soup
  • ½ cup milk (any kind)
  • ½ cup sour cream
  • 2 cups cheddar cheese (divided)

Instructions

  1. Preheat oven to 350°F.
  2. Brown the ground beef in a large pot over medium-high heat, seasoning with salt, pepper, and Italian seasoning as it cooks.
  3. Drain grease, transfer beef to a plate, and cover with foil to keep warm.
  4. Melt 2 tablespoons butter in the same pot and cook the diced onions for about 5 minutes until softened.
  5. Add minced garlic and cook for 1 more minute until fragrant.
  6. Pour in the beef broth, add remaining butter, then stir in the uncooked rice.
  7. Bring to a boil, then reduce to a simmer and cover tightly.
  8. Simmer covered for 10 minutes, then add sliced mushrooms, and cook for an additional 5-10 minutes.
  9. Turn off the heat and let the pot stand with the cover on for 10 minutes.
  10. Stir the cooked rice and mushrooms gently, then mix in the ground beef, cream of mushroom soup, milk, sour cream, and half of the cheddar cheese until well combined.
  11. Transfer mixture to a lightly greased 9 x 13 casserole dish, top with remaining cheddar, cover with foil, and bake for 20 minutes until hot and cheese is melted.
  12. Let sit for 5-10 minutes before serving.

Notes

This casserole pairs well with many side dishes and can be easily tweaked with additional ingredients.
