A comforting, protein-forward dinner that combines ground beef, rice, and cheese for a satisfying meal.

- 1 lb. ground beef (85% lean)
- 1.5 teaspoons Italian seasoning
- Salt and pepper to taste
- 3 tablespoons butter (divided)
- ¾ cup onions (diced)
- 1 tablespoon garlic (minced)
- 2 ½ cups beef broth
- 1 ¼ cups uncooked white long grain rice
- 8 oz. sliced button mushrooms
- 10.5 oz. cream of mushroom soup
- ½ cup milk (any kind)
- ½ cup sour cream
- 2 cups cheddar cheese (divided)
Instructions
- Preheat oven to 350°F.
- Brown the ground beef in a large pot over medium-high heat, seasoning with salt, pepper, and Italian seasoning as it cooks.
- Drain grease, transfer beef to a plate, and cover with foil to keep warm.
- Melt 2 tablespoons butter in the same pot and cook the diced onions for about 5 minutes until softened.
- Add minced garlic and cook for 1 more minute until fragrant.
- Pour in the beef broth, add remaining butter, then stir in the uncooked rice.
- Bring to a boil, then reduce to a simmer and cover tightly.
- Simmer covered for 10 minutes, then add sliced mushrooms, and cook for an additional 5-10 minutes.
- Turn off the heat and let the pot stand with the cover on for 10 minutes.
- Stir the cooked rice and mushrooms gently, then mix in the ground beef, cream of mushroom soup, milk, sour cream, and half of the cheddar cheese until well combined.
- Transfer mixture to a lightly greased 9 x 13 casserole dish, top with remaining cheddar, cover with foil, and bake for 20 minutes until hot and cheese is melted.
- Let sit for 5-10 minutes before serving.
Notes
This casserole pairs well with many side dishes and can be easily tweaked with additional ingredients.
