Description

A hearty one-pan meal featuring ground beef and tender potatoes, topped with melty Cheddar cheese.


Ingredients

  • 1 Tbsp. oil
  • 1 lb. potatoes (about 2 medium), in ½ inch dice
  • 1 lb. lean ground beef
  • 1 and ½ tsp. salt
  • ½ tsp. pepper
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • ½ tsp. smoked paprika
  • 1 cup shredded Cheddar cheese
  • 2 green onions, chopped

Instructions

  1. Heat the oil in a large non-stick skillet over medium-high heat.
  2. Add the potatoes in a single layer and cook undisturbed until lightly browned underneath, about 2 minutes. Stir and then cook undisturbed for another 2 minutes.
  3. Move potatoes to one side of the skillet and add ground beef to the other side. Sprinkle with salt and pepper.
  4. Break up the ground beef and spread it, pressing down with a spoon. Cook for 4 minutes undisturbed while stirring the potatoes occasionally.
  5. Scoop off any excess fat from the beef if desired.
  6. Add onion, bell pepper, garlic, and paprika on top of the potatoes and beef. Flip and stir until everything is evenly mixed.
  7. Cook until vegetables are softened, beef is no longer pink, and potatoes are fork-tender, about 3-4 minutes.
  8. Turn off the heat, sprinkle with cheese, and allow steam to melt it. Top with green onions and serve.

Notes

Allow the dish to rest before serving to enhance the flavor. Consider mixing some cheese into the skillet while cooking for extra cheesiness.
