Ingredients

- 2 medium Zucchini, sliced into 1/4 inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 2/3 cup Parmesan cheese, freshly grated
Instructions
- Preheat your oven to 425°F and prepare a baking sheet with parchment paper or cooking spray.
- In a large bowl, drizzle olive oil over the zucchini rounds and coat them evenly.
- Place the zucchini in a single layer on the baking sheet.
- In a small bowl, mix Parmesan cheese, oregano, basil, garlic powder, salt, and pepper. Sprinkle this mix evenly over the zucchini.
- Bake in the preheated oven for about 4-5 minutes until tender.
- Switch the oven to broil and broil for an additional 4-5 minutes until golden, keeping a close watch.
- Remove from the oven, allow cooling for a few minutes, and serve warm.
Notes
These zucchini rounds are great as a side dish or snack. Store leftovers in an airtight container for up to 3 days.
