Description

A delicious and healthy dish featuring roasted zucchini topped with crispy Parmesan cheese.


Ingredients

  • 2 medium Zucchini, sliced into 1/4 inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 2/3 cup Parmesan cheese, freshly grated

Instructions

  1. Preheat your oven to 425°F and prepare a baking sheet with parchment paper or cooking spray.
  2. In a large bowl, drizzle olive oil over the zucchini rounds and coat them evenly.
  3. Place the zucchini in a single layer on the baking sheet.
  4. In a small bowl, mix Parmesan cheese, oregano, basil, garlic powder, salt, and pepper. Sprinkle this mix evenly over the zucchini.
  5. Bake in the preheated oven for about 4-5 minutes until tender.
  6. Switch the oven to broil and broil for an additional 4-5 minutes until golden, keeping a close watch.
  7. Remove from the oven, allow cooling for a few minutes, and serve warm.

Notes

These zucchini rounds are great as a side dish or snack. Store leftovers in an airtight container for up to 3 days.
