Description
A smooth and rich vegan chia pudding packed with chocolate flavor and essential nutrients.
Ingredients
Scale
- 3 Tbsp chia seeds
- 1/2 cup coconut milk (or any dairy-free milk)
- 1/2 cup water
- 1 Tbsp almond butter
- 1 Tbsp cacao powder
- 1–2 Tbsp maple syrup
- 1/4 cup dark chocolate (melted)
- 2–3 Tbsp chocolate coconut yoghurt (for topping)
Instructions
- Add the chia seeds, coconut milk, water, almond butter, cacao powder, and maple syrup to a blender and blend until smooth and creamy.
- Pour this mixture into two glasses and allow to set in the fridge for a couple of hours.
- Add the melted chocolate topping and let it set for another couple of hours.
- Before serving, top with a spoonful of chocolate coconut yoghurt.
Notes
Store in the fridge for up to four days. Best not to top with coconut yoghurt until just before serving for freshness.
