- 900 g chicken tenders
- 3 tablespoons olive oil
- 5 teaspoons sweet paprika
- 1 teaspoon cayenne pepper or chili powder
- 1.5 teaspoons salt
- 1 teaspoon allspice (optional)
- 1 teaspoon coriander seed powder
- 1 teaspoon black pepper
- 2 garlic cloves (finely diced or grated)
- 1 tablespoon tomato paste or purée
- Zest and juice of 2 limes
- 1 teaspoon coconut oil (for frying)
Instructions
- Mix the marinade ingredients in a large bowl: olive oil, sweet paprika, cayenne pepper, salt, allspice, coriander, black pepper, garlic, tomato paste, lime zest, and juice.
- Rinse the chicken tenders and cut larger pieces in half. Rub the marinade evenly over the chicken, wrap with cling wrap, and refrigerate for at least 1 hour.
- Heat coconut oil in a grill plate or skillet until sizzling. Fry chicken pieces for 4 minutes on each side. Remove and let rest.
- If using a BBQ, heat the plate, spray with olive oil, and grill chicken pieces for 4 minutes on each side.
- Remove cooked chicken to a serving plate and drizzle with lime juice before serving.
Notes
For more flavor, let the chicken marinate overnight. Always allow the chicken to rest after cooking for maximum juiciness.
