Description

Delicious, protein-packed chicken tenders with a crispy, seasoned crust. Perfect for busy weeknights or family dinners.


Ingredients

  • 900 g chicken tenders
  • 3 tablespoons olive oil
  • 5 teaspoons sweet paprika
  • 1 teaspoon cayenne pepper or chili powder
  • 1.5 teaspoons salt
  • 1 teaspoon allspice (optional)
  • 1 teaspoon coriander seed powder
  • 1 teaspoon black pepper
  • 2 garlic cloves (finely diced or grated)
  • 1 tablespoon tomato paste or purée
  • Zest and juice of 2 limes
  • 1 teaspoon coconut oil (for frying)

Instructions

  1. Mix the marinade ingredients in a large bowl: olive oil, sweet paprika, cayenne pepper, salt, allspice, coriander, black pepper, garlic, tomato paste, lime zest, and juice.
  2. Rinse the chicken tenders and cut larger pieces in half. Rub the marinade evenly over the chicken, wrap with cling wrap, and refrigerate for at least 1 hour.
  3. Heat coconut oil in a grill plate or skillet until sizzling. Fry chicken pieces for 4 minutes on each side. Remove and let rest.
  4. If using a BBQ, heat the plate, spray with olive oil, and grill chicken pieces for 4 minutes on each side.
  5. Remove cooked chicken to a serving plate and drizzle with lime juice before serving.

Notes

For more flavor, let the chicken marinate overnight. Always allow the chicken to rest after cooking for maximum juiciness.
