- 1 large lemon, zested and juiced
- 1 tablespoon finely chopped fresh herbs (parsley, dill, or a combination)
- 1 clove garlic, minced
- 4 six-ounce salmon fillets
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees F.
- Line a rimmed baking sheet with parchment paper.
- Grate the zest of half the lemon into a bowl and juice it.
- Cut the remaining lemon into wedges and set aside.
- Mix the chopped herbs and minced garlic with the lemon mixture.
- Pat the salmon fillets dry and place them on the baking sheet, skin side down.
- Brush the fillets with olive oil and season with salt and pepper.
- Spoon the lemon mixture over the salmon.
- Bake for 12 to 15 minutes, until the salmon is opaque and flakes easily.
- Serve with lemon wedges.
Notes
For easier cleanup, you can use aluminum foil instead of parchment paper. Store leftovers in an airtight container for up to 2 days.
