Description
A delicious and nutritious baked salmon dish topped with a crispy Parmesan herb crust.
Ingredients

- 1 salmon filet (about 2 pounds, left whole)
- 3 cloves garlic (finely minced)
- 1/4 cup chopped parsley
- 1/2 cup chopped Parmesan cheese
Instructions
- Preheat oven to 425º F and line a rimmed baking sheet with parchment paper or aluminum foil.
- Place the salmon, skin side down, onto the lined baking sheet and cover with another piece of parchment paper.
- Bake the salmon for 10 minutes.
- Remove from oven and uncover. Top with the garlic, Parmesan, and parsley mixture, sprinkling evenly.
- Return to the oven uncovered and bake until cheese is melted, fish flakes easily, and registers 135º F, about 5 more minutes.
- Allow to rest for 5 minutes before serving.
Notes
Serve with fresh lemon juice or herbs. Consider pairing with quinoa, veggies, or a crisp salad.
