Baked Salmon with Parmesan Herb Crust

Description

A delicious and nutritious baked salmon dish topped with a crispy Parmesan herb crust.


Ingredients

Scale
  • 1 salmon filet (about 2 pounds, left whole)
  • 3 cloves garlic (finely minced)
  • 1/4 cup chopped parsley
  • 1/2 cup chopped Parmesan cheese

Instructions

  1. Preheat oven to 425º F and line a rimmed baking sheet with parchment paper or aluminum foil.
  2. Place the salmon, skin side down, onto the lined baking sheet and cover with another piece of parchment paper.
  3. Bake the salmon for 10 minutes.
  4. Remove from oven and uncover. Top with the garlic, Parmesan, and parsley mixture, sprinkling evenly.
  5. Return to the oven uncovered and bake until cheese is melted, fish flakes easily, and registers 135º F, about 5 more minutes.
  6. Allow to rest for 5 minutes before serving.

Notes

Serve with fresh lemon juice or herbs. Consider pairing with quinoa, veggies, or a crisp salad.
