- 4 4-oz salmon fillets
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 lemon
- 1 tablespoon olive oil
- 3 cloves fresh garlic (minced)
- 4 tbsp butter
Instructions
- Rinse the salmon fillets under cold water and pat them dry with a paper towel.
- Mix together the salt, black pepper, garlic powder, and zest from one lemon in a small bowl.
- Heat a cast-iron skillet over medium-high heat and add the olive oil.
- Place the seasoned salmon fillets skin-side down in the skillet and sizzle for 3 to 4 minutes.
- Flip the fillets gently and cook for another 2 to 3 minutes on the flesh side until golden brown.
- Add the butter and minced garlic to the skillet, swirling them as they melt and spooning the garlic butter over each fillet.
- Squeeze fresh lemon juice on top and check the internal temperature, aiming for about 125º for medium-rare.
- Garnish with lemon wedges and serve.
Notes
Store leftovers in an airtight container; they will last for 2-3 days. Reheat gently in a skillet with a splash of water.
