Description

A comforting and simple one-pot dish of chicken and rice cooked in a savory broth with creamy cheese.


Ingredients

Scale
  • 2 boneless skinless chicken breasts (cut into 1-inch pieces)
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 onion (chopped)
  • 3 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz)
  • 1 1/2 cup brown rice (uncooked)
  • 2 cups cheddar cheese (shredded)

Instructions

  1. Place the chicken, garlic, salt, pepper, onion, chicken broth, cream of chicken soup, and brown rice in the crock pot.
  2. Stir to thoroughly combine all the ingredients.
  3. Cover and cook on high for 210-240 minutes until the rice has absorbed all the chicken broth.
  4. Stir in the shredded cheese.
  5. Cover and allow the heat from the meal to melt the cheese for 5-7 minutes.
  6. Serve warm and enjoy!

Notes

For added depth of flavor, consider sautéing the garlic and onions before adding them to the pot. For creamier texture, add a splash of heavy cream when stirring in the cheese.
