Description

A heartwarming dish with a sweet, caramelized crust and tender, flaky salmon, perfect for a comforting dinner.


Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1 teaspoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon smoked paprika or chipotle powder
  • 1/4 teaspoon fine sea salt
  • Half of a lemon, quartered
  • 3/4 pound green beans or other quick-cooking vegetables
  • 1 tablespoon olive oil (for beans)
  • Salt and fresh ground black pepper (for beans)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C) and set aside a large rimmed baking sheet.
  2. In a small bowl, combine the brown sugar, lemon zest, smoked paprika, and salt.
  3. Pat the salmon fillets dry with a paper towel and rub each fillet lightly with olive oil.
  4. Generously sprinkle the brown sugar mixture over the salmon, massaging it into the flesh and let marinate for 10-15 minutes.
  5. Place the salmon fillets skin-side down on the baking sheet and scatter green beans around them after tossing with the remaining olive oil, salt, and pepper.
  6. Bake for 12-15 minutes until the salmon reaches an internal temperature of 125 degrees F and flakes easily with a fork.
  7. Serve with lemon wedges on the side.

Notes

For added depth, try a pinch of cayenne pepper in the brown sugar mix. Fresh herbs like dill or parsley can enhance the flavor.
