- 4 (6-ounce) salmon fillets
- 1 pound baby yellow potatoes
- 1/2 pound green beans
- 1/4 cup lemon juice
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon chopped parsley, plus more for garnishing
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Line a rimmed baking sheet with parchment paper.
- Boil the potatoes until fork-tender, about 15 minutes.
- In a small bowl, combine lemon juice, Parmesan cheese, olive oil, garlic, and parsley.
- Place salmon, potatoes, and green beans on the baking sheet, and season with salt and pepper.
- Brush the sauce over the salmon and vegetables.
- Bake until salmon flakes easily with a fork, about 15 minutes.
- Enjoy immediately, garnished with extra parsley.
Notes
For added flavor, marinate the salmon in the lemon-olive oil mixture for 30 minutes before cooking.
