Description

A quick and healthy weeknight meal of salmon baked with lemon, garlic, and butter.


Ingredients

Scale
  • 1.5 to 1.75 pounds skin-on salmon fillet
  • 1 lemon, sliced into thin rounds
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons lemon juice
  • 2 to 3 tablespoons honey
  • 5 cloves garlic, finely pressed or minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons finely chopped fresh parsley (optional for garnishing)

Instructions

  1. Preheat oven to 375°F.
  2. Place salmon on a sheet of foil with the skin side down.
  3. Raise the edges of the foil up about 2 inches to form a small tray.
  4. Nestle lemon slices underneath the salmon.
  5. In a microwave-safe bowl, melt the butter, then stir in lemon juice, honey, and garlic.
  6. Pour three-quarters of this buttery mixture over the salmon and season with salt and pepper.
  7. Seal the foil tightly and marinate for 10-15 minutes.
  8. Bake salmon on a baking sheet for about 17 minutes.
  9. Remove the top foil, switch your oven to hi broil, and spoon the reserved buttery mixture over the salmon.
  10. Broil for 5 to 10 minutes until golden and delightful.
  11. Garnish with parsley and serve.

Notes

Serve with roasted vegetables or a light salad for a complete meal.
