Description
A quick and healthy weeknight meal of salmon baked with lemon, garlic, and butter.
Ingredients

- 1.5 to 1.75 pounds skin-on salmon fillet
- 1 lemon, sliced into thin rounds
- 1/2 cup unsalted butter, melted
- 3 tablespoons lemon juice
- 2 to 3 tablespoons honey
- 5 cloves garlic, finely pressed or minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons finely chopped fresh parsley (optional for garnishing)
Instructions
- Preheat oven to 375°F.
- Place salmon on a sheet of foil with the skin side down.
- Raise the edges of the foil up about 2 inches to form a small tray.
- Nestle lemon slices underneath the salmon.
- In a microwave-safe bowl, melt the butter, then stir in lemon juice, honey, and garlic.
- Pour three-quarters of this buttery mixture over the salmon and season with salt and pepper.
- Seal the foil tightly and marinate for 10-15 minutes.
- Bake salmon on a baking sheet for about 17 minutes.
- Remove the top foil, switch your oven to hi broil, and spoon the reserved buttery mixture over the salmon.
- Broil for 5 to 10 minutes until golden and delightful.
- Garnish with parsley and serve.
Notes
Serve with roasted vegetables or a light salad for a complete meal.
