Ingredients

  • 1/2 cup black beans, drained
  • 1/4 cup light mayo
  • 1/4 cup plain non-fat Greek yogurt
  • 2 tbsp salsa
  • 1 tbsp taco seasoning
  • 1 lime, juiced

Instructions

  1. Finely shred the cooked chicken breast using a stand mixer or hand mixer for a tender texture.
  2. Finely dice the red bell pepper and onion.
  3. Chop the cilantro.
  4. Drain and rinse the black beans.
  5. In a mixing bowl, combine the light mayo, Greek yogurt, taco seasoning, salsa, and lime juice; whisk until smooth.
  6. Fold in the shredded chicken, diced peppers, diced onion, chopped cilantro, corn, and black beans, ensuring all ingredients are well-coated.
