A quick and comforting Italian beef and rice skillet that’s perfect for busy weeknight dinners, packed with flavor and high in protein.
Ingredients

- 1/2 onion, diced
- 1 lb. ground beef
- 15 oz diced tomatoes, canned
- 1 1/2 cups mixed veggies (peas and carrots)
- 3/4 cup white rice
- 2 cups beef broth
- 1 tsp dried oregano
- 1 tsp garlic salt
- 1/2 tsp dried basil
- 1/2 tsp pepper
- 1 1/2 cups mozzarella cheese
Instructions
- Brown the ground beef and onion in a large skillet until no longer pink, making sure to drain any excess fat.
- Add in the tomatoes, mixed veggies, rice, beef broth, oregano, garlic salt, basil, and pepper, stirring until well combined.
- Bring to a light boil, then reduce heat to a simmer. Cover and cook until the rice is tender (about 17 minutes).
- Fluff the rice with a fork and sprinkle the mozzarella cheese on top, covering with the lid for about 3 minutes to allow the cheese to melt.
- Optional: Sprinkle with parsley before serving.
Notes
Make sure to keep an eye on the rice while it cooks to avoid overcooking. Leftovers can be stored in an airtight container for up to 3 days.
