Description

Start your day with these delicious, protein-packed pancakes infused with sweet strawberries for a healthy breakfast treat.


Ingredients

  • 6 egg whites
  • 1 cup strawberries, chopped (fresh or frozen)
  • 1/4 cup oat bran (or oat flour)
  • 1/4 cup raw buckwheat flour (or almond flour)
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1 teaspoon honey (if needed)
  • 46 strawberries, sliced (for topping)
  • Nut butter or coconut whipped cream (for topping)

Instructions

  1. Add egg whites, chopped strawberries, oat bran, buckwheat flour, baking soda, and salt to a blender. Pulse 5-6 times until just combined.
  2. Spray a frying pan with coconut oil or another cooking spray.
  3. Cook on low, covered, for 5-7 minutes until bubbles appear on top; this indicates it’s time to flip.
  4. Flip over and cook for another 1-2 minutes until golden.
  5. Top with sliced berries, nut butter, or coconut whipped cream before serving.

Notes

For fluffier pancakes, let the batter rest. Use frozen strawberries carefully to avoid sogginess.
