- 1 cup cottage cheese
- 4 large eggs
- 1 cup rolled oats
Instructions
- In a blender, combine the cottage cheese, eggs, and rolled oats and blend until smooth.
- Add oil to a non-stick pan and heat it. Pour 1/4 cup portions of the pancake batter, cover, and let it cook for 2–3 minutes until bubbles form.
- Flip the pancakes and cook for another 2 minutes until golden and set.
- Repeat until all the batter is used and enjoy!
Notes
Blend thoroughly to avoid lumps, and let the batter rest for a few minutes for better texture. Use non-stick spray or oil to prevent sticking.
