Ingredients

- 9 large eggs
- 3/4 cup cottage cheese
- 1/2 teaspoon fine sea salt
- Freshly ground black pepper, to taste
- Optional add-ins: 1/2 cup shredded cheese, 1 cup chopped spinach, 1/3 cup chopped fresh basil, 1/2 cup cooked veggies
Instructions
- Preheat your oven to 350°F and line a muffin tin with silicone liners or spray with cooking spray.
- In a blender, combine eggs, cottage cheese, salt, and black pepper, blending until smooth.
- Pour the egg mixture into the muffin tin, filling each cup nearly to the top.
- Optionally, add cheese and veggies, gently pressing them into the mixture.
- Bake for 22 minutes or until puffed and a toothpick comes out clean.
- Cool completely before storing any leftovers in an airtight container in the fridge.
Notes
These egg bites can be stored in the fridge for up to 5 days or frozen for longer storage. Reheat in the microwave before serving.
