Description

Quick, protein-packed egg bites using just 3 main ingredients. Perfect for breakfast, lunch, or a snack.


Ingredients

Scale
  • 9 large eggs
  • 3/4 cup cottage cheese
  • 1/2 teaspoon fine sea salt
  • Freshly ground black pepper, to taste
  • Optional add-ins: 1/2 cup shredded cheese, 1 cup chopped spinach, 1/3 cup chopped fresh basil, 1/2 cup cooked veggies

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with silicone liners or spray with cooking spray.
  2. In a blender, combine eggs, cottage cheese, salt, and black pepper, blending until smooth.
  3. Pour the egg mixture into the muffin tin, filling each cup nearly to the top.
  4. Optionally, add cheese and veggies, gently pressing them into the mixture.
  5. Bake for 22 minutes or until puffed and a toothpick comes out clean.
  6. Cool completely before storing any leftovers in an airtight container in the fridge.

Notes

These egg bites can be stored in the fridge for up to 5 days or frozen for longer storage. Reheat in the microwave before serving.
