Ingredients

- 3 slices whole-grain or gluten-free bread
- 1 egg
- 1/3 cup protein powder
- 1/4 cup Greek yogurt or dairy-free yogurt
- 1/4 cup milk of choice
- Optional: 1/2 tsp ground cinnamon
- Optional: 1/2 tsp vanilla extract
- Optional: maple syrup
Instructions
- In a large bowl, add the egg, Greek yogurt, ground cinnamon, and vanilla extract. Stir well using a fork or whisk.
- Add the protein powder and milk, whisking until combined into a smooth batter. If necessary, add more milk to reach desired consistency.
- Dip each slice of bread into the batter until soaked on one side, then flip to soak the other side.
- Heat a skillet over medium heat and grease it with cooking spray or butter.
- Once hot, add a soaked slice of bread and cook for 2-3 minutes until golden brown, then flip and cook the other side for an additional 2 minutes.
- Serve with your favorite toppings, such as Greek yogurt, sliced banana, and a drizzle of maple syrup.
Notes
For better absorption, use stale bread. Experiment with different protein powders for unique flavors.
