- 2 cups Kodiak Pancake Mix
- 1 cup Liquid Egg Whites
- 3/4 cup Greek Yogurt
- 1/3 cup Milk
- 1.5 cups Frozen Berries
- Maple Syrup
- Fresh Berries for topping
Instructions
- Preheat the oven to 350°F (175°C). Lightly spray 4x 2-cup glass bowls with cooking spray and place them on a large baking sheet.
- In a large bowl, combine the pancake mix, egg whites, Greek yogurt, and milk. Whisk until smooth.
- Fold in the frozen berries gently.
- Pour the batter into the prepared bowls and bake for 30-35 minutes or until tops are golden brown and batter has set.
- Top with fresh berries and a drizzle of maple syrup to serve, or cover and store in the fridge.
Notes
Do not overmix the batter to ensure light and fluffy pancakes. You can freeze the bowls without toppings for up to 2 months.
