Description

A quick and hearty Rotisserie Chicken Mushroom Soup perfect for busy weeknights, featuring rich flavors and vegetables.


Ingredients

Scale
  • 1 onion, diced
  • 2 celery sticks, finely chopped
  • 4 garlic cloves, crushed
  • 500 g (1 lb) mushrooms, thinly sliced
  • 2 tsp fresh thyme
  • 1 rotisserie chicken, shredded
  • 6 cups stock
  • 1 cup cream
  • 3 cups spinach, chopped
  • Pinch of chili flakes
  • Salt and pepper to taste
  • Olive oil or butter (for cooking)

Instructions

  1. Heat a splash of olive oil or a knob of butter in a large pot.
  2. Cook the onion and celery until soft and translucent, about 5 minutes.
  3. Add the mushrooms and cook until golden brown, about 5-7 minutes.
  4. Stir in the thyme and garlic and cook until fragrant, about 1-2 minutes.
  5. Pour in the stock and cream, then bring to a simmer.
  6. Cook for 5 minutes to develop the flavors.
  7. Add the chicken and spinach, then simmer for another 5 minutes.
  8. Season with salt, pepper, and lemon juice to taste. Serve with bread.

Notes

For a creamier texture, blend half the soup before adding the chicken and spinach. Experiment with different stocks for varied flavors.
