Description

A refreshing salad featuring crisp cucumbers, crumbled feta, and a creamy dressing, packed with protein and fiber.


Ingredients

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 large cucumber, chopped
  • 8 ounces feta cheese, diced
  • 1/2 cup diced red onion
  • 1/4 cup minced basil
  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Drain and rinse the chickpeas thoroughly under cold water.
  2. Chop the cucumbers, feta, red onion, and basil into bite-sized pieces.
  3. Combine the chickpeas, cucumber, feta cheese, red onion, and basil in a medium mixing bowl.
  4. Prepare the dressing by combining the remaining ingredients in a small bowl or jar and mix well until smooth.
  5. Pour the dressing over the salad and stir to combine, letting the flavors meld together.
