Quick and delicious vegan burrito wraps filled with black beans, avocado, and fresh veggies, perfect for lunch or dinner.

- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn, thawed or drained
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a bowl, mash the avocado and mix in the lime juice until smooth and creamy.
- Fold in the black beans, corn, red onion, and fresh cilantro gently.
- Sprinkle in the cumin, chili powder, salt, and black pepper, mixing just until combined.
- Warm the tortillas in a skillet for about a minute on each side to soften.
- Spoon the filling onto the center of each tortilla and fold tightly to seal.
- Serve immediately and enjoy the flavors!
Notes
For extra flavor, sauté the red onion or add nutritional yeast for a cheesy taste. Leftovers can be refrigerated for up to three days.
