Description

Quick and delicious vegan burrito wraps filled with black beans, avocado, and fresh veggies, perfect for lunch or dinner.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn, thawed or drained
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a bowl, mash the avocado and mix in the lime juice until smooth and creamy.
  2. Fold in the black beans, corn, red onion, and fresh cilantro gently.
  3. Sprinkle in the cumin, chili powder, salt, and black pepper, mixing just until combined.
  4. Warm the tortillas in a skillet for about a minute on each side to soften.
  5. Spoon the filling onto the center of each tortilla and fold tightly to seal.
  6. Serve immediately and enjoy the flavors!

Notes

For extra flavor, sauté the red onion or add nutritional yeast for a cheesy taste. Leftovers can be refrigerated for up to three days.
