Description

A quick and nourishing dish with sautéed garlic spinach and creamy white beans, perfect for busy weeknights.


Ingredients

Scale
  • 2 Tbsp extra virgin olive oil
  • 3 cloves garlic, peeled and thinly sliced
  • 1 (15 oz) can small white beans, rinsed and drained
  • 3 cups fresh spinach
  • 1 Tbsp fresh lemon juice
  • 1/4 tsp Kosher salt
  • Pinch of black pepper
  • 1 Tbsp chives, thinly sliced
  • 1 Tbsp parsley, chopped
  • 1 Tbsp capers, drained
  • Flaky sea salt for serving
  • High-quality extra virgin olive oil for serving

Instructions

  1. Heat a saucepan with 2 Tbsp olive oil over medium heat; add sliced garlic and sauté until fragrant and light golden brown, about 30 seconds.
  2. Stir in the drained white beans and sauté for about 1-2 minutes, stirring occasionally.
  3. Add the fresh spinach; cook until the spinach is just wilted, about 1-2 minutes more.
  4. Remove from heat, stir in chives, parsley, and drained capers.
  5. Serve immediately, or let it sit at room temperature, then sprinkle with flaky sea salt and drizzle with olive oil before serving.

Notes

To revive flavors after storage, add a fresh squeeze of lemon and a pinch of flaky salt before serving.
